Panelle

A timeless classic

Panelle are pancakes made with chickpea flour, they have variouis shapes and sizes and are prepared with water and parsley and then deep fried in oil. They are usually seasoned with salt, lemon juice and often eaten inside a bread bun with sesame (the traditional “muffoletta”, “mafalda” or “semprefresco”).

Usually, the panellaro that sells the bun with panelle will also have crocchè, that, together with panelle, form an unbeatable team. Panelle as many other recipes of the Sicilian tradition come from the Arab culture, which has distinguished the culture of the city of Palermo up to today.
