Mattonella

Puff dream

This delicacy is called mattonella (tile) because it is flat and rectangular, made with puff pastry (sfoglio) and sprinkles of sesame seeds. Inside its layers we can find ham, mozzarella and tomato but there are other versions, such as the vegetarian one (mozzarella and spinach) or many others, left to the fun and the fantasy of any cook. It can be found in bakeries, bars and brasseries. Compared to the other traditional rotisserie specialties, the mattonella is the only one that does not have the usual brioche dough (as for instance calzone.).
